Literature about "nose to tail" consumption & carcass utilisation
Our team from Foodways Consulting is working on a project in collaboration with the swiss sector association for the meat industry.
The aim of the project is to promote the complete utilisation of carcasses with priority to consumption according to "nose to tail" (more info: www.proviande.ch/sf).
For research matters we are looking for studies/reports concerning the utilisation of carcasses & "nose to tail" consumption.
Possible contents for the literature:
- environmental impacts of nose-to-tail consumption
- meat consumption trends / habits
- sales & marketing of carcass pieces (high demand & low demand)
- best practices to support the "nose to tail" consumption
